Stuffed Mushrooms

These are a quick fix in the summer and work as a tasty treat for either a main dish or side course. You can find it and other recipes like it in the cookbook Comfort Cooking. Sausage can be omitted if you prefer a vegetarian dish. Happy eating!

Hardware:
9×9 pan
Skillet
Teaspoon
Mixing spoon
Basting brush
Large bowl
Aluminum foil

Software:
10 to 12 large button mushrooms or 4 medium Portobello mushrooms
½ pound sausage or turkey sausage
4 scallions, diced
3 cloves garlic, diced
½ cup breadcrumbs
3 tablespoons olive oil
2 eggs
6 ounces shredded cheese of choice

Heat oven to 300 degrees and lightly grease pan
Clean and stem mushrooms
Fry sausage, scallions and garlic over medium heat and drain
Dice mushroom stems
Arrange mushrooms in pan, gills up, and brush with olive oil
Mix together meat and bread crumbs in large bowl
Mix in eggs and remaining olive oil
Spoon onto mushrooms and sprinkle with cheese
Lightly cover with foil, allowing for venting
Bake for 20 minutes, removing foil half way through
